Tasty Tuesday — Black Bean Enchiladas

Two days in a row?!?!?  My pain levels are sufficiently diminished to allow me more time in the desk chair and I currently have 3 children asleep in their own beds.  (It’s Monday night and I’m typing now because I can…no pain, no baby draped on me, and nothing better to do.)  Tonight we had a meeting at church so dinner had to be quick and easy.  I suggested making pizza.  I got quite a few during Super Doubles at Harris Teeter last week and we are all stocked up, but my husband nixed that because he’s planning to do that tomorrow night when I am gone for a chemistry review session before my midterm.  So I had to come up with an idea that was quick and didn’t require purchasing anything.  Since I didn’t have any meat thawed I was at a loss.

Someone commented on a Facebook post by Southern Savers with this recipe and it was perfect.  I had all of the ingredients and it was quick and easy!

  • 2 cans of black beans (drained)
  • 16 oz corn (we used frozen, but I imagine canned would be fine, too)
  • 2 cups of salsa (divided)
  • cumin and garlic (minced or powder) to taste
  • tortillas
  • 2 cups shredded cheese (I used cheddar, but might try something with a touch more kick next time)

Cook beans, corn, 1 cup of salsa, cumin, and garlic on stovetop until warm through.  Mash beans slightly.  Spread other cup of salsa in bottom of 9×12 baking dish.  Wrap bean mixture in tortillas and place in dish.  Top with cheese and cook in 350* oven for about 20 minutes or until cheese melts.

We added lettuce shreds, chopped grape tomatoes, and a little sour cream once we put it on our plates and it was delicious!  I was so pleased with this recipe.  And if you’re on WIC, this is a healthy, well-balanced meal that you can make for very little expense!  The black beans, corn, tortillas, cheese, lettuce, and tomatoes were all purchased with WIC checks.  We rarely eat meat-free meals (my husband really likes meat) so it’s hard for me to manage meals that are so inexpensive without buying meats that are less healthy.  This met my cheap and healthy requirements nicely…and my meat-eating husband liked it, too!

Thrifty Thursday: Filling your iPod

Darn!  Most of the good songs on iTunes are now $1.29.  And if you have an iPod, you may think that’s the easiest way to purchase music…not so!  Amazon.com still offers lots of music for only $.99 and they have an mp3 downloader that will put the music right into the iTunes software for you so that it ends up on your iPod next time you sync it.  It is really easy and has saved me a fair amount of money not only because it’s cheaper, but because they also frequently offer coupon codes for free music.  Just a couple of weeks ago, I got 3 free songs by using the coupon code MP34FREE.  (It may still be working, give it a try!  Comment and let others know if it works for you.)

They also have a loooooooooong list (over 1300) of totally free songs.  Not just a handful every week like iTunes does, but a bunch that are free every.single.day.  Some are good, some are not, but there’s a little something for every musical taste in there.

And if you like Christmas music, they are offering a new song FREE each day this month!

Now if I can only save enough to get myself an iPod dock…

Black Friday

Friday I did something I’ve never done before…I got up at 3:30AM on the day after Thanksgiving to go Christmas shopping.  As I said on my Facebook status that morning, being poor makes you do crazy things!  I couldn’t afford the luxury of spending regular price on Christmas gifts this year…the budget is miniscule compared to years past and we wanted to get as much as we could.  All 3 kids got left with my mom while my husband and I braved the stores.  We were in Knoxville, so had all kinds of retail options which was nice.  I do miss having that in Sanford!

Our first stop was Walmart.  We had told our son that if he truly wanted a Nintendo DS that he could use the money he’d saved to buy one.  That was our Christmas present to him.  A little sneaky and probably not a great move, but it was the only way we could afford to get him something that he really wanted.  So when I saw that Walmart would have DS Lites for $98 on Black Friday they came first on my plan of attack.  We got in line at about 4:15AM and got one of the last tickets available for that item.  At 5AM the line started moving quickly and by 5:05AM we had a red Nintendo DS Lite in our hands.  I had already been to the toy section to see if any of the other items on our list were on sale but they weren’t, so we headed to the checkout immediately.  Along with EVERYONE else in the store.  It was a madhouse.  It probably took a good 45 minutes to get checked out.  While my husband stood in line I grabbed a couple of other things…breastpads (because it was time to nurse Violet but she was at my mom’s house, thus I had a minor problem) and chocolate covered cherries, my mom’s favorite treat.  We got checked out (FINALLY!) and headed to Kohl’s for 50% off Fisher Price toys.

Once we got to Kohl’s, we saw that their checkout line was wrapped around the entire store.  I directed my husband to go stand in it and headed for the toy section.  I had a list of things I wanted to get for Violet that included a Fisher Price tea set, a purse, and a princess hooded towel.  I found them all, along with some stocking stuffers and hooded towels for the boys, a couple of DS games, a dragon set for my younger son, and a pastel girly shape sorter for Violet.  We spent almost our entire budget there, but got it all for about half regular price.  Can’t beat that!

We were checked out by 7AM and thought we’d stop at a couple more stores, just to see if we could find anything else we were looking for on sale.  We couldn’t, so we headed back to my mom’s house.  We were back there by about 8AM and pretty much done with the Christmas shopping.  I have to say…it was a little bit of a rush saving so much money even though I had to drag myself out of the nice warm bed at a time that I’m usually deep in dreamland.  I have a few more things I have to get and then when my mom gets here I’m taking her to buy gifts for the kids.

We’ll have toys under the tree this year.  Maybe not as many as in years past, but that’s OK…it will give us a chance to focus more on the real reason for the holiday.  And maybe, in the coming years, we can remember this year and how happy the kids were with less stuff.

When it rains it pours!

Last week is the best week we’ve had in a while financially.  Though we didn’t get any actual money, several things happened that kept us moving forward and feeling better about everything.  And today we got another bit of good news.  I feel like my patience and faith is finally being rewarded and I feel so very blessed.  For the past 16+ months, we’ve never once come up short.  Every time we needed cash for something, it appeared.  Every time we’ve needed something we couldn’t afford, it’s fallen into our laps.  And now, finally, it seems like things are turning around.

I’ve never thought you had to go to church to be a good person or a true Christian.  But when we made the decision to start attending church again something in our lives changed.  I still don’t think it makes me any better than someone who doesn’t but I think it’s changed my heart.  I’m trusting God and I know that He will provide one way or another.  It’s a big step forward for me in my spiritual journey and one that I needed desperately.

If you’ve been praying for us, don’t stop yet…but someday soon I hope we can say we’re out of the woods.

Thrifty Thursday — Cleaning Supplies

Believe it or not, the most effective cleaners are the cheapest and safest for your family and the environment.  If you have vinegar, baking soda, olive oil, club soda, lemon juice, Borax, and rubbing alcohol you can clean almost anything.  There are all kinds of websites out there that tell you how to clean your home naturally with these products, so try googling to find some homemade cleaning products that will work for you.  It will save you a ton of money as well as keeping your family and our environment healthier!

Thrifty Thursday — Couponing Links

Online resources for couponing are abundant.  There are people out there who find the deals and post them often days before the sales start, so any “I don’t have time to figure it all out.” excuse is not valid.  Trust me, it doesn’t take a lot of time!  Over the past several weeks I’ve found quite a few places that I like to go to get info and learn new tricks.  Here’s a few:

  1. Hot Coupon World — This site has forums, coupon databases, link to sites where you can print your own, etc.  It has good info, but can be overwhelming for newbies.
  2. Taking Stock — This is a blog by a Raleigh N&O reporter.  It’s a lot of local information on couponing.  And because I had a hard time figuring out how to do an RSS feed (I am RSS stupid) for my blog reader, I’ll just link you up to that, too.  And if you want even more access to info, you can follow her on Twitter @sue_stock.  Look in the left hand column for links to some basic information on couponing in this area.
  3. Southern Savers — This blog has lots of deals for Southern grocery stores.  She’ll lay out all of the deals for you…all you have to do is find the coupons in your super-organized coupon folder.  There are also some good posts about getting started.

Those three sites alone give me pretty much all of the information I need to plan shopping trips to maximize my savings.  I don’t spend more than a few minutes scanning the sale papers each week because most of the good deals are spelled out on those sites.  That means my couponing time investment is in clipping and organizing on Sunday nights.  (Or whenever I get to it…sometimes Tuesday afternoon!)  That doesn’t take more than a couple of hours if I have no interruptions.  And it’s well worth the time if you’re looking for an easy way to save some money!

Wishful Wednesday — Gym Membership

Such a small thing, really.  And in the old days, I could have afforded this without blinking.  Too bad I didn’t have the motivation.  But now?  I have all of the motivation in the world and no money.  I slacked all summer long because it was hot outside and now I have to get back into it…but one really hot day or one rainy day can put a stop to a streak.  It would be nice to have working out inside as an option, along with the childcare that most gyms have available.

I’m looking forward to the new YMCA opening as it’s just down the street from me.  I’m really hoping my family qualifies for a scholarship, though.  Because if we don’t I might as well forget about it.  It’s just not in our budget.

Overheard

This conversation just went down at my house:

Husband:  What are you doing Thursday? (We’re trying to fit in some things and debating when we can both do them.)

Me:  Nothing I think.

Oldest son:  Good!  I think the fair starts Thursday. (It doesn’t, but this is beside the point.)

Me:  That’s great.  We can’t afford to go to the fair.

Oldest son, to his daddy:  That girl is crazy! (Referring to me.)

Husband:  No, she’s not.

Perhaps you had to be here…maybe you need to know my husband and son, but this conversation cracked me up.  “We can’t afford it.” has become my standard response to just about everything these days and he obviously doesn’t believe me when I say it any more.  I guess I’m just glad my husband recognizes the truth of that statement!

Tasty Tuesday — Homemade pizza on the cheap!

After my recent couponing trips, I have a plethora of various food items in my kitchen just begging to be made into some delicious meal!  One of the easiest (and most loved by the kids) is homemade pizza.  It’s quick and easy, not to mention inexpensive if you use coupons.

  • Buy Pillsbury refrigerated pizza dough.  I had coupons printed from coupons.com for this product.
  • Ragu pasta sauce.  I had coupons from the paper.  My husband doesn’t like this brand and feels it’s too runny for spaghetti, but it’s great for pizza!
  • Kraft shredded cheese.  Again, newspaper coupons.
  • Any other toppings you’d like to use.

For a cookie sheet sized cheese pizza, it’s going to end up costing me about $2.  This is enough to feed the entire family if I throw in a salad!  The kids enjoy helping me make it, they love the end result, and my husband likes the price.  Everyone’s happy!
