Tasty Tuesday — Black Bean Enchiladas

Two days in a row?!?!?  My pain levels are sufficiently diminished to allow me more time in the desk chair and I currently have 3 children asleep in their own beds.  (It’s Monday night and I’m typing now because I can…no pain, no baby draped on me, and nothing better to do.)  Tonight we had a meeting at church so dinner had to be quick and easy.  I suggested making pizza.  I got quite a few during Super Doubles at Harris Teeter last week and we are all stocked up, but my husband nixed that because he’s planning to do that tomorrow night when I am gone for a chemistry review session before my midterm.  So I had to come up with an idea that was quick and didn’t require purchasing anything.  Since I didn’t have any meat thawed I was at a loss.

Someone commented on a Facebook post by Southern Savers with this recipe and it was perfect.  I had all of the ingredients and it was quick and easy!

  • 2 cans of black beans (drained)
  • 16 oz corn (we used frozen, but I imagine canned would be fine, too)
  • 2 cups of salsa (divided)
  • cumin and garlic (minced or powder) to taste
  • tortillas
  • 2 cups shredded cheese (I used cheddar, but might try something with a touch more kick next time)

Cook beans, corn, 1 cup of salsa, cumin, and garlic on stovetop until warm through.  Mash beans slightly.  Spread other cup of salsa in bottom of 9×12 baking dish.  Wrap bean mixture in tortillas and place in dish.  Top with cheese and cook in 350* oven for about 20 minutes or until cheese melts.

We added lettuce shreds, chopped grape tomatoes, and a little sour cream once we put it on our plates and it was delicious!  I was so pleased with this recipe.  And if you’re on WIC, this is a healthy, well-balanced meal that you can make for very little expense!  The black beans, corn, tortillas, cheese, lettuce, and tomatoes were all purchased with WIC checks.  We rarely eat meat-free meals (my husband really likes meat) so it’s hard for me to manage meals that are so inexpensive without buying meats that are less healthy.  This met my cheap and healthy requirements nicely…and my meat-eating husband liked it, too!

 

Tasty Tuesday: Sausage Apple Stuffing

Yum, yum, yum.  I did some experimenting with new recipes for Christmas dinner and the results were fabulous!  We always get a recipe sheet in our Angel Food boxes so I looked through them to find something different.  This is a slightly adapted version of theirs.

  • 1 stick unsalted butter
  • 1 large yellow onion, chopped
  • 3 medium celery stalks, chopped
  • 1 bag (15-16 oz) cubed seasoned stuffing
  • parsley flakes
  • 1.5 chopped apples
  • 1 lb andouille sausage (I’m sure I spelled that wrong…sorry!)
  • chicken broth
  1. In a large nonstick skillet, brown sausage and break up well.  Drain and set aside.
  2. Using the same skillet, melt the butter and saute the onion and celery.
  3. Transfer vegetables and butter to a large (VERY large!) bowl.
  4. Add stuffing and parsley. (I eyeballed the parsley amount, about 1 tablespoon I think!)
  5. Stir in enough broth to moisten the stuffing, about 2.5 cups.
  6. Add the sausage and apples.
  7. Place stuffing in a baking dish, drizzle with additional 1/2 cup of broth, then cover and bake until heated through.

It was delicious!  And this made a ton of stuffing.  We’re still eating it but the good news is it’s so yummy that we’re not tired of it yet!  Let me know if you try it.  It was a hit at my house…definitely a good change from the standard stuffing we have been eating here.

 

Tasty Tuesday — More Pumpkin

I had some more pumpkin, so I did some more recipe searching.  Pumpkin Bundt Cake + Basic Cake Glaze = Absoulutely delicious!

The butterscotch pudding in the was just the right ingredient.  It’s sweet, but not so sweet that you feel bad after eating it.  Yummmmmmm!

 

Tasty Tuesday — Quick and Easy Favorites

One of my favorite quick and easy meals is lasagna…from a box.  I know, I know!  I do enjoy making lasagna but sometimes I just don’t want to put all of the effort into it.  And frankly, my lasagna is hit or miss.  I haven’t found a recipe that consistently turns out really good for me.  Enter Stouffer’s, with their various versions of lasagna, all of which are delicious and easy.  Now that they are preservative free, I like them even more and feel a little less guilty about serving them to my family.

Last month they were on sale at Food Lion (2 for $10) and I bought several to have on hand for days when the meat doesn’t thaw or things get busy.  I’ll be single parenting a couple of nights this week while my husband is involved in other things, so I’m looking forward to lasagna one night already.  Add some garlic bread and a salad and you have a super quick and easy meal.  It’s a favorite at my house!  What’s your family’s favorite quick and easy meal?

Tasty Tuesday — Sausage + Apples + Sweet Potatoes = YUM!

A friend shared this recipe on her facebook page and I thought it sounded good, especially since I had all of the ingredients on hand.  We actually baked it rather than doing it in the crockpot and added carrots and an onion.  It was a really delicious autumn-y dish that was inexpensive and easy.  Even my picky kids liked it, so it was a hit all around!
