Motivation Monday — Make a Meal Plan

This week, I vow to not make sandwiches or cereal for dinner.  (Not that I would EVER do something like that!)  Instead, I am making a meal plan now, taking out the meat that will need to thaw for each night, and making sure I have all of the ingredients.

Tonight’s dinner is a whole chicken in the crock pot, and I can’t wait.  It’s already in there and smells so yummy!  As for the rest of the nights this week, I don’t know.  I need to evaluate our meat situation and hop over to the Ingredient Search at allrecipes to see what I can put together with what I have on hand.  With any luck, I’ll escape the every-other-day trips to the grocery store for this thing or that thing so I save some money.

    last week it was chili and then Sat. I cooked a pork roast in the crock pot and drained all the liquid, cut it up, put it back in the crock pot and made BBQ. Yummy! We still have quite a bit left. I made the chili last Sunday and we still have enough for one more meal. I wish I would have waited to make chili this week….much colder. This week homemade chicken noodle soup and who knows what else. I have gotten so lazy with my cooking. Most of the time, it is just Mike and I and I do not like to cook for 2…it is too hard.

    This is definitely a chili week!! And with the GREAT buy at Lowes on Old El Paso this week, there is a lot of Mexican in our near future :) I’m going back to Weight Watchers tonight, so probably a couple of salad and _______ nights — I just need to figure out what to fill in the blank with!

    I need to try your whole chicken in the crock pot. I’m not a huge fan of chicken “on the bone,” but I’m trying to learn to eat it! I cut up a whole chicken for the first time ever last week (at 0.29/pound I figured I could suffer through it!) and survived!
