I grabbed a small cut of boneless bottom round at Lowe’s Foods last week (it was cheap, and the small cuts are hard to come by!) but had no idea what to do with it. We had potatoes and carrots, so I thought a pot roast made the most sense but I wanted to try something a little different. Which led me to this recipe. We had to do a little improvising…we had no celery or fresh tomatoes, so we added some celery seed and used a can of diced tomatoes instead. It turned out to be really, really yummy. I’m not a huge fan of pot roast, but this one had a lot of flavor.
This morning, my mom and I went to Dinner Savvy and put together a bunch of meals to have on hand while I recover. I can’t wait to eat some of them. I love the fresh ingredients and the fact that I don’t have to clean up after myself. And knowing that I have a freezer full of meals that just have to be thawed and thrown in the oven or crock pot. The best part? My mom paid for it as a gift to us!
We also purchased a couple of food boxes from Angel Food Ministries. Several people had mentioned it to me lately and you can’t beat the food prices. We picked up in Cary and it was so easy…I paid via PayPal and placed my order, sent my husband over there while I was making my meals, and he didn’t even have to get out of the car! We got a ton of food for very little money. Since we’re feeding more people at our home over the next month (my mom is here for 2 weeks, then my in-laws are here for how ever long it takes for me to completely lose it and demand that everyone leave so I can get into a routine) we needed to have the kitchen well stocked so I don’t have to go grocery shopping or worry about what I’m going to serve everyone. With my husband going back to work and trying to get in all the hours he can, it will quickly become my responsibility again after my mom leaves.
And sadly, I am looking forward to my hospital stay for some different foods. Our eating out habit has had to be stopped completely and I would give just about anything for even some fast food right now! I may have Chick-Fil-A for every single meal while I’m in there…

Sounds like you are ready! Tell Kaye I said hello. By the way, I love Chik-Fil-A. If I get fast food, that is what I want. Of course, we don’t have one in Van Buren, have to go to Fort Smith, but that is ok. Just think, it will be over soon! I can’t wait to see pictures.

The only CFA we have here is in the hospital, so I rarely get it, too! My mom says hello back and hi to the rest of the fam. I’ll have pictures ASAP after I get home on Friday, if not before. I’m going to see if a friend can post them on my FB wall for me…

CFA is the absolute BEST meal after childbirth. Next to bringing home a healthy baby, that is the best part about delivering at CCH!

Just to let you know – you don’t have to drive to Cary for Angel Food. There is a local group doing the orders and delivery here in Sanford. You can contact Ramon or Donna Atkins @258-6007. The pickups are at CUOC (Christian United Outreach Center).
