A little twist I always do is to chop up onions and add some mushrooms to the sauce and I used to almost double the recipe to make it really thick with lots of layers (I have a really deep lasagna pan) -- he used to say I shouldn't mess with greatness, but people I fixed it for seemed to like the additions. But I know he would roll over in his grave if he saw me use cottage cheese or cheddar cheese in it!!! I need a tried and true recipe, so I'd rather try something from someone I know rather than one from a recipe site. Here's hoping I have enough Italian blood in me to make it right, haha!
